This Strawberry Mascarpone Bruschetta comes together in just 15 minutes and is a refreshing treat for warmer days. It's also a great Mother's Day or holiday idea as it only requires a few ingredients and no oven time at all.
What is Mascarpone?
Mascarpone is a type of soft cheese originating from Italy. It's rich and spreadable and contains a high percentage of butterfat (around 75%).
Mascarpone has a loose and velvety texture and tastes mildly sweet and slightly nutty. For these reasons, mascarpone is a very versatile ingredient that can be used in both sweet and savory dishes.

Ingredients for Strawberry Mascarpone Bruschetta
This simple strawberry mascarpone dessert recipe requires just 6 ingredients.
Bread - A day-old classic French baguette is ideal. Slice diagonally into ¼ to ½" thick slices.
Olive Oil - To brush baguette before toasting. Use good quality olive oil.
Strawberries - Use fresh strawberries for this recipe. Wash, drain, and hull strawberries. Then, slice strawberries lengthwise, cut them in rounds, or dice them.
Mascarpone - Use good quality mascarpone straight out of the refrigerator (no need to thaw)
Fresh Mint - You can either use whole small fresh mint leaves or finely slice them, whatever you prefer.
Honey - to drizzle on the bruschetta. You can also use maple syrup or chocolate glaze.
How to Make Strawberry Mascarpone Bruschetta
Toast the Baguette
Slice baguette diagonally into ¼ to ½" thick slices. Brush each side with olive oil.
Heat a large skillet on medium-high. Toast bread slices for 2-3 minutes on each side, or until edges are golden brown.
Transfer bruschetta to serving plate and allow to cool.
Assembly
Spread 1 or 2 teaspoons of mascarpone on each piece of bruschetta.
Top with sliced strawberries, fresh mint leaves, and a drizzle of honey.
Serve immediately!

Instructions
- Slice the baguette diagonally into ¼ to ½ inch thick slices. Brush each side with olive oil using a pastry brush.
- Heat a non-stick skillet on medium-high and cook baguette slices for 2-3 minutes on each side or until edges are golden brown. Transfer to a serving plate and cool down.
- Spread 1-2 tsp. of mascarpone on each slice (cooked side) and top with sliced or diced strawberries.
- Top with mint leaves and drizzle with honey. Store in refrigerator until serving.
