    Strawberry season is well under, and with barbecue season just around the corner, what's better than a simple 6-ingredient strawberry dessert?

    This Strawberry Mascarpone Bruschetta comes together in just 15 minutes and is a refreshing treat for warmer days. It's also a great Mother's Day or holiday idea as it only requires a few ingredients and no oven time at all.

    What is Mascarpone?

    Mascarpone is a type of soft cheese originating from Italy. It's rich and spreadable and contains a high percentage of butterfat (around 75%).

    Mascarpone has a loose and velvety texture and tastes mildly sweet and slightly nutty. For these reasons, mascarpone is a very versatile ingredient that can be used in both sweet and savory dishes.

    Mascarpone goes great in sauces (like this Creamy Tomato and Mascarpone Pasta) as it provides a distinctly rich and creamy flavor.

    It pairs equally well with fresh fruit, such as berries and citrus and can be used as a cake or cheesecake filling, and as cupcake or cake frosting (such as these Limoncello Cupcakes with Mascarpone Lemon Frosting).

    Ingredients for Strawberry Mascarpone Bruschetta

    This simple strawberry mascarpone dessert recipe requires just 6 ingredients.

    Bread - A day-old classic French baguette is ideal. Slice diagonally into ¼ to ½" thick slices.

    Olive Oil - To brush baguette before toasting. Use good quality olive oil.

    Strawberries - Use fresh strawberries for this recipe. Wash, drain, and hull strawberries. Then, slice strawberries lengthwise, cut them in rounds, or dice them.

    Mascarpone - Use good quality mascarpone straight out of the refrigerator (no need to thaw)

    Fresh Mint - You can either use whole small fresh mint leaves or finely slice them, whatever you prefer.

    Honey - to drizzle on the bruschetta. You can also use maple syrup or chocolate glaze.

    How to Make Strawberry Mascarpone Bruschetta

    Toast the Baguette

    Slice baguette diagonally into ¼ to ½" thick slices. Brush each side with olive oil.

    Heat a large skillet on medium-high. Toast bread slices for 2-3 minutes on each side, or until edges are golden brown.

    Transfer bruschetta to serving plate and allow to cool.

    Assembly

    Spread 1 or 2 teaspoons of mascarpone on each piece of bruschetta.

    Top with sliced strawberries, fresh mint leaves, and a drizzle of honey.

    Serve immediately!

    How to Serve

    Serve this Strawberry Mascarpone Bruschetta as dessert after a summer barbecue or lunch/dinner.

    Making Ahead and Storing

    This bruschetta is best serve immediately or chilled in an airtight container for a few hours.

    You can store leftovers in a refrigerator for up to one day, but the bruschetta will lose its crispiness over time.

    Make it Vegan

    To make this vegan-friendly, substitute mascarpone cheese with vegan-mascarpone and use your preferred vegan maple syrup instead of honey.

    Can I Toast the Bruschetta on the Grill?

    Yes! Brush sliced baguette with olive oil as you would normally do and place on the grill or barbecue (medium-high heat) until slightly browned.
    Then, follow the recipe for assembly and toppings.

    What Kind of Bread is Best for Bruschetta?

    For this recipe, I used a medium-sized classic French baguette. Feel free to use a larger baguette and adjust other ingredient proportions accordingly.

    Ciabatta or sourdough bread are some other good choices.

    I find that a day-old baguette works perfectly for any sweet or savory bruschetta, but feel free to use any type of bread you like or have available. This is a great way to use day-old bread instead of throwing it away! You can also use fresh bread to make bruschetta.

    Ingredients
      

    • 1 medium-sized French-style Baguette day-old, or Ciabatta or sourdough bread (sliced into ¼-½ inch slices)
    • 4 tbsp. olive oil
    • 60 g mascarpone cheese (2 oz/4 tbsp)
    • 100 g fresh strawberries washed, hulled, and sliced or diced (½ cup)
    • 2 tbsp. honey (or maple syrup)
    • handful fresh mint leaves optional

    Instructions
     

    • Slice the baguette diagonally into ¼ to ½ inch thick slices. Brush each side with olive oil using a pastry brush.
    • Heat a non-stick skillet on medium-high and cook baguette slices for 2-3 minutes on each side or until edges are golden brown. Transfer to a serving plate and cool down.
    • Spread 1-2 tsp. of mascarpone on each slice (cooked side) and top with sliced or diced strawberries.
    • Top with mint leaves and drizzle with honey. Store in refrigerator until serving.
