Strawberry Matcha Smoothie

This Strawberry Matcha Smoothie makes a healthy light breakfast or snack and is made in beautiful pink (strawberry) and green (matcha) layers!

Ingredients

Bottom (Strawberry) Layer

  • 150 g frozen strawberries hulled (1 cup)
  • 80 mL almond milk or any plant-based milk (⅓ cup)
  • 60 g plain, low-fat yogurt Greek yogurt or regular yogurt (¼ cup)
  • 1 tbsp. maple syrup or honey/ agave syrup (or sweetener of choice)

Top (Matcha) Layer

  • 2 tsp. matcha powder high-quality
  • 160 mL coconut cream (⅔ cup) see notes
  • 60 mL plain, low-fat yogurt Greek yogurt or regular yogurt (¼ cup)
  • tbsp. maple syrup or honey/ agave syrup (or sweetener of choice)
  • 2 tsp. coconut chips or flakes (optional)

Instructions

  • Combine bottom layer ingredients in a blender and mix until smooth. Divide mixture between 2 glasses.
  • Transfer to freezer for at least 20-30 minutes to harden. If you skip this step, layers will not form.
  • Combine bottom layer ingredients, except for coconut flakes, in a blender and mix until smooth. Pour mixture evenly between the two glasses (which should have a hardened bottom layer) using a funnel.
  • Top smoothies with shredded coconut or coconut flakes, as desired, or use your favourite toppings.

Notes

If coconut cream is not available (or not desired), substitute with the same amount of plain, low-fat yogurt.
