- 6 large fresh strawberries hulled and diced
- 142 g low-fat Greek yogurt plain (½ cup)
- 120 mL milk semi-skimmed, whole, or plant based (½ cup)
- 80 g old-fashioned rolled oats or oat flakes/quick oats (1 cup)
- 2 tsp. chia seeds
- ½ tsp. vanilla extract
- 1-2 tbsp. agave syrup or maple syrup or honey
- 1 tbsp. almond butter optional
Optional Toppings
- 1 tbsp. almond butter
- 1 tbsp. cornflakes crushed
- 2-4 fresh strawberries halved
Wash, hull and dice strawberries. Place them in a microwave-safe bowl and heat on high for 1-2 minutes, until softened. Mash them up lightly using a fork.
Place strawberries and all remaining overnight oats ingredients in a large bowl and stir to mix well until combined.
Divide mixture between 2 resealable jars or glasses, cover, and refrigerate overnight or until set.
Add your favourite toppings and serve as a breakfast or snack.
