Earl Grey Yogurt Cake
Full of earl grey tea leaves, a dash of lemon and a sprinkling of sugar, this Earl Grey yogurt cake is the perfect tea-time treat!

- 200 g flour cake or all-purpose (1¼ cup)
- 2 tsp. baking powder
- ¼ tsp. salt
- 150 g granulated sugar (¾ cup)
- 120 mL vegetable oil (½ cup)
- ½ tsp. vanilla extract
- 3 medium-sized eggs
- 3-4 teabags Earl Grey tea
- 1 tbsp. lemon juice
- 240 g low-fat, plain Greek yogurt or regular yogurt (1 cup)
- 2 tbsp. powdered sugar (optional, for sprinkling)
Preheat oven to 175°C (350F) and line a 9x5" loaf tin with parchment paper.
Sift and mix flour, salt, and baking powder in a medium-sized bowl and set aside.
Place oil and sugar in a large mixing bowl of a stand mixer fitted with the paddle attachment and mix on medium speed until combined.
Add vanilla extract and eggs, one by one, mixing well after each addition.
Add Greek yogurt, earl grey tea leaves, and lemon juice and mix for another 1-2 minutes.
Slowly add dry ingredients and mix until just combined. Do not overmix.
Pour batter into lined loaf tin and bake in the center of the oven for 45-60 minutes until golden brown at the top and a skewer inserted into the center comes out clean.
Allow to cool for 5-10 minutes in loaf tin, then transfer to a wire rack to cool completely.
Sprinkle with powdered sugar as desired, slice, and serve.
