Earl Grey Yogurt Cake

Full of earl grey tea leaves, a dash of lemon and a sprinkling of sugar, this Earl Grey yogurt cake is the perfect tea-time treat!

Ingredients

  • 200 g flour cake or all-purpose (1¼ cup)
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 150 g granulated sugar (¾ cup)
  • 120 mL vegetable oil (½ cup)
  • ½ tsp. vanilla extract
  • 3 medium-sized eggs
  • 3-4 teabags Earl Grey tea
  • 1 tbsp. lemon juice
  • 240 g low-fat, plain Greek yogurt or regular yogurt (1 cup)
  • 2 tbsp. powdered sugar (optional, for sprinkling)

Instructions

  • Preheat oven to 175°C (350F) and line a 9x5" loaf tin with parchment paper.
  • Sift and mix flour, salt, and baking powder in a medium-sized bowl and set aside.
  • Place oil and sugar in a large mixing bowl of a stand mixer fitted with the paddle attachment and mix on medium speed until combined.
  • Add vanilla extract and eggs, one by one, mixing well after each addition.
  • Add Greek yogurt, earl grey tea leaves, and lemon juice and mix for another 1-2 minutes.
  • Slowly add dry ingredients and mix until just combined. Do not overmix.
  • Pour batter into lined loaf tin and bake in the center of the oven for 45-60 minutes until golden brown at the top and a skewer inserted into the center comes out clean.
  • Allow to cool for 5-10 minutes in loaf tin, then transfer to a wire rack to cool completely.
  • Sprinkle with powdered sugar as desired, slice, and serve.
