Instructions

  • After 20-30 minutes, transfer peach mixture through a fine-mesh strainer into a glass bowl and set aside.

Oolong Tea

  • Steep Oolong teabags/leaves in hot water for 4-5 minutes. Strain and discard teabags.

Tapioca Pearls (Optional)

Once pearls float to the top (around 30 seconds), decrease heat to medium-low and simmer for 5 minutes (covered).
Drain cooked tapioca pearls and transfer to a bowl with cold water.
Let sit for 30 seconds, drain, and transfer tapioca to glass bowl containing peach syrup.

Assembly

  • In a serving glass, add 3-4 tbsp. of peach syrup, tapioca pearls, and ice.
Top up with Oolong tea and serve cold with sliced peach and mint leaves. Stir well and serve.
