Strawberry Mascarpone Bruschetta

  • 1 medium-sized French-style Baguette day-old (sliced into ¼-½ inch slices)
  • 2 tbsp. olive oil
  • 60 g mascarpone cheese (2 oz/4 tbsp)
  • 100 g fresh strawberries washed, hulled, and sliced or diced (½ cup)
  • 2 tbsp. honey (or maple syrup)
  • handful fresh mint whole or chopped


  • Slice baguette diagonally into ¼ to ½ inch thick slices. Brush one side of each slice with olive oil using a pastry brush.
  • Heat a non-stick skillet on medium-high and cook baguette slices (oiled-side down) for 2-3 minutes until golden brown. Transfer to a serving plate.
  • Spread 1-2 tsp. of mascarpone on each slice (cooked side) and top with sliced or diced strawberries.
  • Add mint leaves (whole or chopped) and drizzle with honey. Store in refrigerator until serving.
