Fruit and Nut White Chocolate Bark

- 90 g white chocolate coins [½ cup] or any type of white chocolate suitable for melting
- a handful of dried fruit raisins, cherries, cranberries
- 6 roasted pistachios
- 6 roasted hazelnuts
Place hazelnuts and pistachio into a freezer bag on a hard flat surface. Using a rolling pin, roll over a couple of times to coarsely crush the nuts.
Place white chocolate coins into microwave-safe bowl and heat on high power at 20 second increments, stirring well using a fork between each increment, until white chocolate has melted (approx. 40-60 seconds). [If using a whole white chocolate bar, make sure to chop this into equal-sized pieces before microwaving].
Place 1 level tablespoon into each of 6 silicone muffin molds to cover the bottom surface. Top with crushed nuts and dried fruit.
Chill for 30 minutes or until white chocolate has solidified. Pop out of silicone molds and serve.
