Fruit and Nut White Chocolate Bark

This Fruit and Nut White Chocolate bark made with pistachio, hazelnut, and dried fruit is a super easy bite-sized treat and a healthy alternative to store-bought chocolate bars all year round!

Ingredients

  • 90 g white chocolate coins [½ cup] or any type of white chocolate suitable for melting
  • a handful of dried fruit raisins, cherries, cranberries
  • 6 roasted pistachios
  • 6 roasted hazelnuts

Instructions

  • Place hazelnuts and pistachio into a freezer bag on a hard flat surface. Using a rolling pin, roll over a couple of times to coarsely crush the nuts.
  • Place white chocolate coins into microwave-safe bowl and heat on high power at 20 second increments, stirring well using a fork between each increment, until white chocolate has melted (approx. 40-60 seconds). [If using a whole white chocolate bar, make sure to chop this into equal-sized pieces before microwaving].
  • Place 1 level tablespoon into each of 6 silicone muffin molds to cover the bottom surface. Top with crushed nuts and dried fruit.
  • Chill for 30 minutes or until white chocolate has solidified. Pop out of silicone molds and serve.
