Rigatoni Amatriciana

A twist on the classic Amatriciana, this Rigatoni Amatriciana recipe is quick, simple, and will feed a crowd!

INGREDIENTS

- rigatoni (or other dry pasta) - guanciale (or pancetta/bacon) - onion - chopped chili - dry white wine - canned whole or diced tomatoes - olive oil  - pecorino cheese (or parmesan)

Making Ahead

Amatriciana sauce can be made in advance (without adding the cheese) and stored in an airtight container in the refrigerator for 2-3 days. Before serving, reheat the sauce in a skillet or microwave. You may need to add some water if the sauce is too thick.
